Copycat Sweetgreen Kale Caesar Salad

If you follow me on Instagram you know I am obsessed with this salad and eat it weekly. The only thing that stops me from eating it more is the price tag: $10 (yikes). I decided to take matters into my own hands, and learn how to make the damn thing at home. You can spend about $10 buying all these ingredients and make about 4-5 salads instead! This recipe is a normal serving, but I never actually measure anything out. I just throw a bunch of it in a bowl and mix it together, so don’t feel like you *need* these exact measurements. I actually had the idea when I was in Trader Joe’s and bought some cheese crisps (I love anything cheese related). It reminded me of the cheese crisps that are in my favorite salad! And now here we are, making my favorite salad at home. It isn’t the exact salad, but it’s damn close and saves me $$$ (unless I am being lazy and go to sweetgreen anyways).

Ingredients (Serves 1)

  • 2 cups shredded kale

  • 2 cups chopped romaine

  • 1/2 cup diced cooked chicken

  • 1/4 cup parmesan cheese crisps

  • Handful of grape tomatoes (cut in half)

  • 1/2 lime - juiced/squeezed over salad

  • 2 tablespoons fresh parmesan cheese (preferably the thick sliced)

  • 1/4 cup caesar dressing

Directions

  • In a giant mixing bowl, start with the lettuce on the bottom and add all other ingredients on top, ending with the dressing. Mix together with tongs until dressing has covered all the lettuce, then put in a separate salad bowl and enjoy!

  • Tip: You obviously don’t have to mix it this way, I just prefer it. I always mix it together before putting it in my salad bowl, this way the dressing + ingredients is all mixed together and it tastes better in my opinion (this is also what they do at Sweetgreen, duh).
